For extra flavor, sear the roast in a hot skillet before placing it in the slow cooker. Feel free to add other vegetables such as potatoes or celery. If the gravy is too thin at the end of cooking, you can thicken it by mixing a tablespoon of cornstarch with two tablespoons of cold water and stirring it into the gravy during the last 30 minutes of cooking.
