In a large bowl, combine the cooked ground beef mixture, kidney beans, chopped tomatoes, and cooked rice. Stir well to combine.

Pour the mixture into a large casserole dish. Top evenly with grated cheese and chopped black olives.

Bake in the preheated oven until the cheese is melted and bubbly, and the casserole is heated through, about 45-50 minutes. The edges should be lightly browned.

For a spicier kick, add a pinch of red pepper flakes or a dash of hot sauce to the beef mixture.
Feel free to substitute ground turkey or chicken for the ground beef.
You can use canned diced tomatoes instead of whole peeled tomatoes for convenience.
To prevent the rice from sticking to the bottom of the saucepan, add a tablespoon of olive oil or butter before simmering.
This casserole can be assembled ahead of time and stored in the refrigerator for up to 24 hours before baking. Add an extra 10-15 minutes to the baking time if baking from cold.
