Follow The Directions

01

Step

Preheat oven to 350 degrees F (175 degrees C). Line 24 muffin cups with paper liners or lightly grease with cooking spray. (5 minutes)

02

Step

In a large mixing bowl, combine the white cake mix, water, eggs, and vegetable oil. Beat with an electric mixer on medium speed until smooth, about 2 minutes. Add 2 tablespoons of lime zest, lime juice, and green food coloring (if using); mix until just combined. (5 minutes)

03

Step

Pour the batter evenly into the prepared muffin cups, filling each about 2/3 full. (2 minutes)

04

Step

Bake in the preheated oven until golden brown and a toothpick inserted into the center comes out clean, about 18-20 minutes. (20 minutes)

05

Step

Remove cupcakes from the oven and let them cool in the muffin tin for 5 minutes before transferring them to a wire rack to cool completely. (5 minutes)

06

Step

While the cupcakes are cooling, prepare the frosting. In a large mixing bowl, beat the softened butter and cream cheese with an electric mixer until smooth and creamy. (3 minutes)

07

Step

Add 2 tablespoons of lime zest and vanilla extract to the creamed butter mixture; mix well. Gradually add the sifted confectioners' sugar, 1/2 cup at a time, mixing on low speed until the frosting is smooth and fluffy. (5 minutes)

08

Step

Chill the frosting in the refrigerator for about 30 minutes to allow it to thicken slightly, making it easier to spread. (30 minutes)

09

Step

Once the cupcakes are completely cooled and the frosting has chilled, spread a generous amount of frosting onto each cupcake using a spatula or piping bag. (10 minutes)

10

Step

Garnish with pearlized sprinkles or additional lime zest, if desired. Serve immediately or store in an airtight container in the refrigerator.

For a more intense lime flavor, add an additional teaspoon of lime zest to the batter and frosting.
To make a lime simple syrup, combine 1/4 cup sugar and 1/4 cup lime juice in a saucepan and heat over medium heat until the sugar is dissolved. Brush the cooled cupcakes with the syrup for extra moisture and flavor.
If you don't have green food coloring, you can use a drop of blue and a drop of yellow to achieve a similar color.
For best results, use high-quality cream cheese.
Cupcakes can be stored at room temperature for 1-2 days or in the refrigerator for up to 5 days.
Make sure the butter and cream cheese is softened before mixing the frosting
