Follow The Directions

01

Step

In a large saucepan or Dutch oven, mash the minced garlic. Stir in the curry paste until well combined. Add the diced onion and bell pepper. Cook over medium-low heat, stirring occasionally, until the onion is softened and translucent, about 5 minutes.

02

Step

Add the ground chicken to the saucepan, breaking it up with a spoon. Add the chopped celery, carrots, zucchini, and tomatoes. Increase heat to medium, cover the saucepan with a lid, and cook until the carrots have softened slightly, about 7 to 10 minutes.

03

Step

Pour in the chicken broth and soy sauce. Season with salt and freshly ground black pepper to taste. Reduce heat to medium-low, cover with a lid, and simmer for 1 hour, or until the stew has thickened and the flavors have melded together beautifully.

04

Step

Serve hot, garnished with fresh herbs like parsley or cilantro, if desired.

For a richer flavor, consider browning the ground chicken separately before adding it to the stew.
Feel free to add other vegetables to the stew, such as potatoes, sweet potatoes, or spinach.
For a spicier stew, use a hot curry paste or add a pinch of red pepper flakes.
This stew can be made ahead of time and stored in the refrigerator for up to 3 days. The flavors will only deepen as it sits.
If the stew becomes too thick during simmering, add a little more chicken broth to reach your desired consistency.

I found it a little bland, so I added some chili flakes and a bit more soy sauce. It was much better that way!
