For a deeper smoky flavor, try using wood chips, such as hickory or mesquite, in your grill. If you don't have white balsamic vinegar, regular balsamic vinegar will work, but it will impart a darker color to the dressing. Feel free to experiment with different types of nuts and cheeses. Walnuts or pecans would be a delicious alternative to pistachios, and goat cheese or feta cheese could be used instead of blue cheese. For a vegetarian/vegan version omit the blue cheese.
