Add 1 tablespoon oil to the skillet and repeat to cook remaining 2 chops. (10-12 minutes)

Recipe View Make the Tomato Relish: Add remaining 1 tablespoon oil to the skillet. Add tomatoes and sprinkle with salt and pepper. Cook, stirring occasionally, until tomatoes are slightly blistered and softened, about 3 minutes. Add olives and lemon juice and cook for 2 minutes. (5 minutes)

For an even more intense flavor, marinate the pork chops in the Greek seasoning for at least 30 minutes, or up to overnight, in the refrigerator.
