For an even more intense flavor, marinate the pork chops in the Greek seasoning for at least 30 minutes, or up to overnight, in the refrigerator. Don't overcrowd the pan when searing the pork chops. This will lower the temperature of the pan and prevent the chops from browning properly. Feel free to add other Mediterranean vegetables to the tomato relish, such as bell peppers, zucchini, or eggplant. Serve with a side of couscous or quinoa for a complete and satisfying meal. A squeeze of fresh lemon juice right before serving brightens the flavors even more.
