Follow The Directions

Step

In a large, heavy-bottomed saucepan, combine the cranberries, diced pear, orange juice, sugar, water, minced candied ginger, orange zest, cinnamon stick, star anise, garam masala, and salt. (2 minutes)

Bring the mixture to a vigorous boil over medium-high heat, stirring frequently to prevent sticking. (5 minutes)

Once boiling, reduce the heat to medium and simmer gently, stirring occasionally, until the cranberries have softened and burst, and the sauce has thickened slightly. This should take approximately 10-12 minutes.

Remove the saucepan from the heat and allow the sauce to cool completely to room temperature. (30 minutes)

Once cooled, remove and discard the cinnamon stick and star anise pod.

Transfer the cranberry sauce to an airtight container and refrigerate until ready to serve. The flavors will meld and deepen as it chills. (2 hours)

For a smoother sauce, use an immersion blender to briefly blend after cooking, but before cooling. Be careful not to over-blend.
This sauce can be made up to 3 days in advance. The flavors actually improve with time!
Adjust the amount of sugar to your liking, depending on the sweetness of your pears and the tartness of your cranberries.
Try adding a splash of Grand Marnier or other orange liqueur for an extra layer of flavor.
