Bring a large pot of lightly salted water to a boil. Add the kluski noodles and cook according to package directions until al dente, about 7-10 minutes. Drain well, reserving about 1/2 cup of the pasta water. Set aside.

Cook, stirring occasionally, until the bacon is crispy and golden brown, about 5-8 minutes. Remove the bacon with a slotted spoon and set aside, leaving the rendered bacon fat in the skillet.

Add the chopped onion to the skillet with the bacon fat and cook until softened and translucent, about 3-5 minutes. Add the chopped cabbage and cook, stirring occasionally, until the cabbage is wilted and tender-crisp, about 8-10 minutes.

Return the cooked bacon to the skillet with the cabbage and onion mixture. Add the cooked noodles and toss gently to combine. If the mixture seems dry, add a little of the reserved pasta water to moisten. Season with hot sauce, salt, and freshly ground black pepper to taste.

For a vegetarian option, omit the bacon and use 2 tablespoons of olive oil or vegetable oil to sauté the vegetables. Consider adding smoked paprika for a bacon-like flavor.
Feel free to experiment with different types of noodles, such as egg noodles or spaetzle.
For added depth of flavor, consider adding a splash of apple cider vinegar or a pinch of caraway seeds while cooking the cabbage.
