Follow The Directions

01

Step
25 mins

Caramelize the Onions: Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the thinly sliced onions, thyme, and bay leaf. Season with salt and pepper. Cook, stirring occasionally, for 5 minutes. Reduce the heat to medium-low and continue to cook, stirring occasionally, until the onions are deeply browned and caramelized, about 15-20 minutes. Transfer the caramelized onions to a plate and discard the bay leaf. Reserve the skillet.

02

Step
8 mins

Cook the Macaroni: Bring a large pot of lightly salted water to a boil. Add the elbow macaroni and cook according to package directions, about 8 minutes, until al dente. Drain the macaroni and set aside.

03

Step
6 mins

Prepare the Cheese Sauce: In the reserved skillet, melt the remaining 2 tablespoons of butter over medium heat. Whisk in the all-purpose flour and cook for 1 minute, creating a roux. Gradually whisk in the beef broth and milk, bringing the mixture to a simmer. Season with a pinch of freshly grated nutmeg, salt, and pepper. Reduce the heat to low and cook, stirring occasionally, until the sauce has thickened, about 5 minutes. Stir in the shredded Gruyère cheese until it is completely melted and the sauce is smooth and creamy.

04

Step
2 mins

Combine and Serve: Add the drained macaroni and caramelized onions to the cheese sauce. Toss gently to combine, ensuring that the macaroni is evenly coated with the sauce and onions. Serve immediately.

For a richer flavor, use bone broth instead of regular beef broth.
Adding a splash of dry sherry to the caramelized onions during the last few minutes of cooking enhances their sweetness.
If you don't have Gruyère cheese, you can substitute it with a blend of Swiss and Parmesan cheese.
For a crispy topping, sprinkle breadcrumbs over the mac and cheese before baking it in a preheated oven at 350°F (175°C) for 15-20 minutes.

The Gruyère cheese makes all the difference. So much better than regular cheddar mac and cheese.

I was a bit skeptical about the beef broth, but it really works! The nutmeg is a nice touch too.
