Prepare the Marinade: In a mini food processor or blender, combine 1/4 cup maple syrup, half of the jalapeño (seeds removed for less heat, if desired), minced garlic, rice wine vinegar, salt, and black pepper. Blend until smooth. (5 minutes)

Marinate the Salmon: Place salmon fillets in a resealable plastic bag. Pour the marinade over the salmon, seal the bag, and refrigerate for 20 minutes. After refrigerating, let the bag sit at room temperature for 10 minutes. (30 minutes)

Preheat and Prepare: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking. (5 minutes)

Bake the Salmon: Remove salmon from the marinade and pat dry with paper towels. Place the fillets on the prepared baking sheet. Season with additional salt and pepper. Thinly slice the remaining jalapeño and arrange the slices on top of the salmon fillets. (5 minutes)

Glaze and Finish: Bake in the preheated oven for 10 minutes. Remove from the oven and brush the salmon fillets with the remaining 2 teaspoons of maple syrup. Return to the oven and bake for an additional 3-5 minutes, or until the fish flakes easily with a fork. (15 minutes)

For a milder flavor, remove the seeds and membranes from the jalapeño before blending the marinade.
Patting the salmon dry before baking helps it caramelize nicely in the oven.
Serve the Firecracker Salmon with a side of quinoa or roasted vegetables for a complete and balanced meal.
