A vibrant and refreshing salad that sings with the crisp anise notes of fennel, the sweet-tart tang of red grapefruit, and the juicy crunch of green apple. Complemented by delicate red onion, toasted walnuts, and fragrant basil, all brought together by a zesty citrus vinaigrette.

Follow The Directions

01

Step
5 mins

In a large salad bowl, gently combine the thinly sliced fennel, red onion, and apple. Drizzle the apple slices with 1 teaspoon of lemon juice to prevent browning. (5 minutes)

02

Step
5 mins

Arrange the grapefruit segments artfully over the fennel mixture. Sprinkle with toasted walnuts and torn basil leaves. (5 minutes)

03

Step
5 mins

In a small bowl, whisk together 2 teaspoons lemon juice, lime juice, and grapefruit juice. Gradually whisk in the extra-virgin olive oil until emulsified. Season to taste with salt and freshly ground black pepper. (5 minutes)

04

Step
2 mins

Just before serving, drizzle the citrus vinaigrette over the salad. Toss gently to coat. Serve immediately to preserve the crispness of the fennel and apple. (2 minutes)

For the best flavor, use freshly squeezed citrus juices.
To toast the walnuts, spread them on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, or until fragrant and lightly golden. Watch carefully to prevent burning.
If you don't have red grapefruit, pink grapefruit can be substituted.
The salad can be assembled ahead of time, but add the dressing just before serving to prevent the greens from wilting.
A sprinkle of crumbled goat cheese would be a delicious addition.
