Rinse and drain the soaked kidney beans. Place them in a large pot and cover with fresh water. Bring to a boil for 2-3 minutes. Drain again and discard the water. (5 minutes)

Return the beans to the pot and add 3 cups of water. Bring to a boil, then reduce heat to low. Add the sliced onion, carrots, celery, diced tomatoes (with their juice), tomato paste, oregano, thyme, olive oil, salt, and pepper. Stir well to combine. (5 minutes)

Cover the pot and simmer gently for 50-60 minutes, or until the beans are tender and the soup has thickened slightly. Stir occasionally, adding more water if needed to maintain the desired consistency. (60 minutes)

Stir in the chopped fresh parsley just before serving. Taste and adjust seasonings as needed. (2 minutes)

For a richer flavor, use homemade vegetable broth instead of water.
A bay leaf added during simmering can enhance the depth of flavor. Remember to remove it before serving!
Serve with crusty bread for dipping into the delicious broth.
For a vegan option, ensure your tomato paste is vegan-friendly.
If using a pressure cooker, cook all ingredients except parsley for 3-4 minutes under 15 pounds pressure. Stir in parsley after releasing the pressure.
Soaking the beans overnight is crucial for reducing cooking time and improving digestibility.
