Add enough water to the saucepan to barely cover the beans and potatoes.

Partially cover the saucepan with a lid. Bring the mixture to a gentle simmer over medium-low heat. Cook gently until the green beans and potatoes are tender, about 25-30 minutes. Uncover towards the end of cooking to allow the sauce to reduce if it appears too watery.

For a richer flavor, use homemade tomato puree or add a tablespoon of tomato paste along with the fresh tomatoes.
Adjust the amount of water as needed during cooking to maintain the desired sauce consistency.
Serve Fasolakia warm or at room temperature. It's delicious on its own or with a side of crusty bread and a block of feta cheese.
Consider adding other vegetables such as zucchini or carrots.
