In a large pot, bring generously salted water to a rolling boil. Add the egg noodles and cook according to package directions, usually around 6-8 minutes, until al dente. Drain the noodles well, reserving about 1/2 cup of the pasta water. Return the drained noodles to the pot. (2 minutes)

While the noodles are cooking, melt the butter in a large skillet over medium heat. Add the diced onion and cook, stirring occasionally, until softened and lightly caramelized, about 6-8 minutes. Add the minced garlic and cook for another minute, until fragrant, being careful not to burn it. (8 minutes)

Add the baby spinach to the skillet and cook, stirring frequently, until the spinach is just wilted, about 1-2 minutes. (2 minutes)

Pour the spinach and onion mixture over the cooked noodles. Toss gently to combine. If the noodles seem dry, add a splash of the reserved pasta water to moisten them. Season generously with sea salt and freshly ground black pepper to taste. Serve immediately.

For an extra layer of flavor, try adding a pinch of nutmeg or a squeeze of fresh lemon juice at the end.
If you don't have fresh spinach, you can use frozen spinach. Be sure to thaw it completely and squeeze out any excess water before adding it to the skillet.
Feel free to experiment with other vegetables, such as mushrooms, bell peppers, or zucchini.
Toasted pine nuts or a sprinkle of grated Parmesan cheese make a delightful garnish.
