First Fry: In a deep, heavy-bottomed pot (cast iron works great), heat approximately 2 inches of vegetable and peanut oil over medium heat until it reaches 300°F (150°C). Thoroughly pat the chicken wings dry with paper towels. Working in batches of about half the wings, carefully lower the wings into the hot oil and fry for 4-5 minutes, maintaining the oil temperature. (20 minutes)

Rest: Remove the wings and place them on a paper towel-lined plate to drain excess oil. (5 minutes)

Second Fry: Increase the oil temperature to 350°F (175°C). Again working in batches, fry the wings for a second time until the skin is beautifully crispy and golden brown, and the meat is cooked through (about 5-6 minutes). Ensure the internal temperature of the chicken reaches 165°F (74°C). (20 minutes)

Season and Serve: Remove the wings from the oil and drain them on paper towels. Transfer the wings to a large bowl and immediately sprinkle the seasoning mix over them, tossing to evenly coat. Serve hot with your favorite dipping sauces, such as blue cheese or ranch dressing, and celery sticks, if desired. (5 minutes)

For even crispier wings, let the wings cool completely after the first fry before proceeding with the second fry.
Adjust the amount of cayenne pepper to control the level of spiciness.
