Rinse the capers under cold water and soak in a small bowl of fresh water for 5 minutes to mellow their saltiness. Drain thoroughly. (5 minutes)

Coarsely chop the soaked capers. In a small bowl, whisk together the chopped capers, minced garlic, 2 tablespoons of olive oil, lemon juice, and crushed coriander seeds. Season generously with freshly ground black pepper. (5 minutes)

Preheat an outdoor grill to high heat. Ensure the grill grates are clean and lightly oiled to prevent sticking. (10 minutes)

Brush the halloumi slices on both sides with the remaining 1 tablespoon of olive oil. (2 minutes)

Carefully place the halloumi slices directly on the hot grill grates. Cook for about 2 minutes, until a beautiful golden crust forms. Flip the slices and cook for another 2 minutes, until the cheese is softened in the center and golden brown on the other side. (4 minutes)

Arrange the grilled halloumi slices on a serving platter. Drizzle generously with the prepared caper sauce and sprinkle with fresh cilantro leaves. Season to taste with sea salt and freshly ground black pepper. Serve immediately.

For an extra layer of flavor, try adding a pinch of red pepper flakes to the caper sauce.
Halloumi can also be pan-fried in a skillet if you don't have access to a grill. Use medium-high heat and cook for the same amount of time on each side.
Serve immediately for the best texture and flavor.
