Preheat oven to 350 degrees F (175 degrees C). In a small bowl, combine 1/4 cup sugar and cinnamon; set aside. Sprinkle about 1 tablespoon of the cinnamon-sugar mixture over the chopped apples. (5 minutes)

In a medium bowl, beat together 1/3 cup sugar and cream cheese until smooth. Beat in the egg until light and fluffy. Stir in the vanilla extract until just combined. Set aside. (10 minutes)

Unroll crescent roll dough and arrange side-by-side on a large baking sheet. Pinch the seams together to create one large sheet. Spread the spiced apples lengthwise down the center of the dough. Pour the cream cheese filling evenly over the apples. Using kitchen shears or a sharp knife, snip the edges of the dough into strips approximately 1 inch wide. Fold the strips alternately over the filling, creating a braided effect. Pinch the ends closed. (20 minutes)

Bake in the preheated oven for 30-35 minutes, or until the pastry is golden brown and the filling is set. While still warm, brush the top with melted butter and sprinkle generously with the remaining cinnamon-sugar mixture. (35 minutes)

For an extra touch, sprinkle chopped walnuts or pecans over the apples before adding the cream cheese filling.
If you prefer a less tart filling, use Golden Delicious or Honeycrisp apples instead of Granny Smith.
To prevent the pastry from browning too quickly, tent it loosely with foil during the last 10 minutes of baking.
This pastry is best served warm, but can also be enjoyed at room temperature. Store leftovers in an airtight container in the refrigerator.
