While the cream mixture is heating, pour the whole milk into a small bowl. Sprinkle the powdered gelatin evenly over the milk and let it sit undisturbed for 5 minutes to bloom and soften.

Remove the saucepan from the heat and whisk in the bloomed gelatin mixture until it is fully dissolved and the mixture is smooth. (1-2 minutes)

Place a fine-mesh strainer over a large measuring cup or bowl with a spout. Carefully pour the coffee mixture through the strainer to remove any undissolved particles, ensuring a silky-smooth final texture. (1 minute)

Pour the strained panna cotta mixture evenly into individual serving glasses or ramekins.

Allow the panna cottas to cool to room temperature before carefully transferring them to the refrigerator. (30 minutes)

Chill for at least 4 hours, or preferably overnight, to allow the panna cottas to set completely. (4 hours)

For an extra layer of flavor, infuse the heavy cream with coffee beans for 30 minutes before heating. Remove the beans before proceeding with the recipe.
Adjust the amount of brown sugar to your preference, depending on the strength and bitterness of your coffee.
To unmold the panna cottas, dip the bottom of each ramekin briefly in warm water to loosen the edges.
