Follow The Directions

01

Step
5 mins

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat. (5 minutes)

02

Step
4 mins

In a large bowl, cream together 1 3/4 cups sugar, softened butter, cream cheese, baking powder, salt, peppermint extract, and vanilla extract using an electric mixer until light and fluffy. (3-5 minutes)

03

Step
3 mins

Beat in the egg until well combined. Gradually add 2 cups of the flour, mixing on low speed until just incorporated. The dough will be soft. (2-3 minutes)

04

Step
5 mins

Divide the dough in half. Place one half in a separate bowl. Add the green food coloring (if using) and the remaining 1/2 cup flour to one bowl, mixing until evenly colored. Mix the cocoa powder into the other half of the dough until well combined. (5 minutes)

05

Step
18 mins

Place 1/2 cup sugar in a small bowl for rolling. Pinch off about 1 teaspoon of the green dough and roll into a small ball. Repeat with the remaining green dough. Do the same with the chocolate dough. (15-20 minutes)

06

Step
23 mins

To assemble each cookie, line up 4 small balls of dough in a row, alternating colors: green, chocolate, green, chocolate. Gently squish the 4 small dough balls together and roll lightly into one larger ball. Roll the ball in the sugar to coat. Place on the prepared baking sheet, leaving about 2 inches between cookies. Repeat with remaining dough. (20-25 minutes)

07

Step
14 mins

Bake until the edges of the cookies are lightly golden brown, approximately 13 to 15 minutes. (13-15 minutes)

08

Step
10 mins

Let the cookies cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely. (10 minutes)

For a more intense mint flavor, add a few drops of peppermint oil instead of extract.
Ensure your butter and cream cheese are truly at room temperature for a smooth dough.
Don't overmix the dough once you add the flour to prevent tough cookies.
If the dough is too sticky to roll, chill it in the refrigerator for 15-20 minutes before shaping.
