Follow The Directions

01

Step

Preheat oven to 300 degrees F (150 degrees C). (10 minutes)

02

Step

Combine heavy cream, vanilla bean, and salt in a saucepan over medium heat. Heat until the surface of the cream begins to shimmer, approximately 5 minutes. Remove from heat and discard the vanilla bean. (5 minutes)

03

Step

In a large bowl, whisk together egg yolks, 3/4 cup plus 2 tablespoons white sugar, and cocoa powder until thoroughly blended. Gradually pour the hot cream over the egg mixture, whisking constantly, until all the cream is incorporated and the custard is smooth. Strain the custard into a large glass measuring cup. (10 minutes)

04

Step

Arrange eight 6-ounce ramekins in a roasting pan. Carefully pour the custard into the ramekins. Add enough warm water to the pan to reach halfway up the sides of the ramekins. Cover the pan loosely with aluminum foil. (5 minutes)

05

Step

Bake in the preheated oven until the custard is firm around the edges but still slightly wobbly in the center, about 1 hour. Remove from oven and allow to cool to room temperature. (1 hour)

06

Step

Cover the ramekins with plastic wrap and refrigerate until thoroughly chilled, approximately 3 hours. (3 hours)

07

Step

Position an oven rack about 6 inches from the heat source and preheat the oven's broiler. (5 minutes)

08

Step

Remove ramekins from the refrigerator and gently blot any moisture on the surface with a paper towel. Arrange the ramekins on a baking sheet. Evenly distribute 1 tablespoon of brown sugar over the top of each custard, ensuring it reaches the edges. (5 minutes)

09

Step

Broil in the preheated oven until the sugar is melted and forms a crisp, golden-brown crust, about 30 seconds to 2 minutes. Allow to cool briefly before serving. (2 minutes)

For an extra layer of flavor, consider adding a tablespoon of coffee liqueur to the custard mixture.
Be vigilant while broiling to prevent burning the sugar; the timing can vary depending on your broiler.
Serve immediately after broiling for the best textural contrast between the crisp sugar and the creamy custard.
