Preheat oven to 400 degrees F (205 degrees C). (5 minutes)

Lightly grease or line a 12-cup muffin tin with paper liners. (2 minutes)

In a large bowl, blend the mashed banana, egg substitute, vanilla soy milk, vegetable oil, and applesauce together until well combined. (3 minutes)

In the same bowl, stir in the white rice flour, sucanat (or brown sugar), baking powder, and salt. Mix until just moistened – be careful not to overmix. (2 minutes)

Gently fold in the dried cherries and vanilla chips. (1 minute)

Pour the batter into the prepared muffin tin, filling each cup approximately 2/3 full. (5 minutes)

Bake at 400 degrees F (205 degrees C) for 30 minutes, or until a wooden skewer inserted into the center comes out clean.

For best results, use a very ripe banana. It will add sweetness and moisture to the muffins.
If you don't have sucanat, brown sugar makes a great substitute.
These muffins are best enjoyed fresh, but they can be stored in an airtight container at room temperature for up to 2 days or frozen for longer storage.
To reheat frozen muffins, microwave for 30 seconds or until warmed through.
