Pour 2 cups of water into the corn mixture and bring to a simmer. (5 minutes)

Whisk in the polenta, ensuring there are no lumps. Bring the mixture back to a simmer, then reduce the heat to low. (2 minutes)

Simmer, stirring occasionally, until the polenta has thickened and absorbed most of the water. (20 minutes)

Add the remaining 1/2 cup of water and stir. Continue to cook until the water is completely absorbed and the polenta is creamy. (10 minutes)

Stir in the remaining fresh corn kernels and 1 teaspoon of butter. (2 minutes)

Remove from heat, cover the pot, and let the polenta sit for 5 minutes to allow the flavors to meld before serving. (5 minutes)

For an even richer flavor, use chicken or vegetable broth instead of water.
Adjust the amount of cayenne pepper to your preference. For a milder dish, omit it altogether.
If you don't have fresh corn, frozen corn can be used. Thaw it before adding it to the recipe.
Serve as a side dish or as a base for grilled vegetables, roasted meats, or seafood.
