For an extra golden color, brush the tops of the puffs with an egg wash (1 egg beaten with 1 tablespoon of water) before baking. Feel free to experiment with different cheeses, such as Gruyere, Parmesan, or a blend of your favorites. These puffs can be made ahead of time and frozen. Bake from frozen, adding a few extra minutes to the baking time. Add a pinch of cayenne pepper for a touch of heat.
