Preheat your oven to 350 degrees F (175 degrees C). (5 minutes)
In a small saucepan over medium-low heat, melt the butter. Add the minced onion and cook, stirring occasionally, until translucent and softened, about 8-10 minutes. Stir in the poppy seeds and set aside. (10 minutes)
Using a serrated knife, carefully slice the sourdough loaf horizontally, being sure to not cut all the way through. You want to keep the base of the loaf intact. Then, slice the bread vertically, again taking care not to cut all the way through. This creates pockets for the cheese and onion mixture. (5 minutes)
Gently stuff each slice with a piece of American cheese, followed by a spoonful of the poppy seed-onion mixture. Ensure the cheese and onion mixture are evenly distributed throughout the loaf. (10 minutes)
Wrap the stuffed loaf tightly in aluminum foil. (2 minutes)
Bake in the preheated oven for 30 minutes, or until the cheese is fully melted and the bread is heated through. (30 minutes)
Carefully remove the foil and bake for another 5 minutes to allow the bread to get slightly crusty. (5 minutes)
Let the bread cool slightly before serving. Cut into slices and enjoy immediately!
