Preheat oven to 300°F (150°C). Line an 8-inch square baking pan with parchment paper, ensuring the paper extends over the edges for easy removal. (5 minutes)

In a medium bowl, whisk together the all-purpose flour and 2 tablespoons of confectioners' sugar. Cut in the cold, cubed butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs. (10 minutes)

Bake in the preheated oven for 20 minutes, or until lightly golden. Let cool on a wire rack for 15 minutes. Spread the raspberry jam evenly over the cooled base. (40 minutes)

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, until well combined and pale yellow. (10 minutes)

Gradually beat in the rice flour until just combined. Stir in the red food coloring until the batter reaches your desired shade of red. (5 minutes)

Spread the red batter evenly over the jam layer. (5 minutes)

Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center comes out clean. Cool completely in the pan, approximately 20 minutes. (50 minutes)

In a medium bowl, beat together the sifted confectioners' sugar and softened butter until smooth. Stir in the milk and maple extract until the icing is creamy and spreadable. Add more milk if needed to reach desired consistency. (10 minutes)

Evenly spread the maple icing over the cooled red layer. (5 minutes)

Using the parchment paper overhang, lift the squares out of the pan and transfer to a cutting board. Slice into 1-inch squares using a sharp knife. (5 minutes)

For a cleaner cut, chill the squares in the refrigerator for 30 minutes before slicing.
If you don't have rice flour, you can use all-purpose flour. However, rice flour gives a slightly lighter and more tender texture.
Adjust the amount of red food coloring to achieve your desired shade of red, keeping in mind that the color will intensify slightly during baking.
Store the finished squares in an airtight container at room temperature for up to 3 days.
