Bring the mixture to a boil, stirring constantly. Continue to cook, stirring constantly, until the liquid evaporates and the remaining syrup thickens and coats the nuts, about 15 minutes. The mixture will become quite sticky. (15 minutes)

Immediately spread the coated peanuts onto the prepared baking sheet in a single layer. Use two forks to separate any peanuts that are stuck together, ensuring even distribution. (5 minutes)

Bake in the preheated oven, stirring and separating the peanuts every 5 minutes, until they are glazed and slightly dry to the touch, about 20 minutes total. Watch carefully to prevent burning. (20 minutes)

Remove from oven and let the peanuts cool completely on the baking sheet before breaking them into smaller, individual pieces. The glaze will harden as it cools.

For a deeper, smokier flavor, try using smoked paprika instead of chili powder.
Feel free to adjust the amount of chipotle chile powder to suit your spice preference. Start with less and add more to taste.
Store cooled peanuts in an airtight container at room temperature for up to a week.
These peanuts are fantastic sprinkled over salads or used as a crunchy topping for ice cream.
