Cook the Noodles: Bring a large pot of lightly salted water to a rapid boil. Add the kluski noodles and cook, uncovered, stirring occasionally, until tender but still slightly firm (7-10 minutes). Drain well and return the noodles to the pot. Stir in 2 tablespoons of butter until melted and the noodles are coated. Set aside.

Sauté Aromatics: In a large pot or Dutch oven, melt 3 tablespoons of butter over medium heat. Add the finely chopped onion and cook, stirring occasionally, until translucent (about 5 minutes). Add the minced garlic and cook until fragrant (about 30 seconds). Stir in the Italian seasoning and red pepper flakes until evenly distributed.

Cook the Cabbage: Add the chopped cabbage and water to the onion mixture. Stir well to combine. Cover the pot and cook, stirring often, until the cabbage is tender and reduced in volume by about half (15-20 minutes). There should be a small amount of liquid remaining in the pot.

Combine and Season: Gently stir the buttered noodles into the cabbage mixture until well combined. Season with garlic powder, salt, and freshly ground black pepper to taste. Add more butter to taste. Serve immediately.

For added richness, consider browning the butter before adding the onion.
Feel free to experiment with other vegetables, such as spinach, kale, or collard greens.
A sprinkle of grated Parmesan cheese adds a lovely savory note.
