For a richer flavor, try using full-fat coconut milk instead of evaporated milk. Feel free to add raisins, chopped nuts, or dried cranberries during the last 5 minutes of simmering for added texture and flavor. Adjust the amount of cinnamon and nutmeg to suit your personal preference. A pinch of cardamom or ginger would also be delicious additions. If you don't have rum extract, a splash of dark rum can be used instead. Alternatively, omit it for an alcohol-free version.
