For extra flavor, add a teaspoon of vanilla extract or a tablespoon of sugar to the batter. If the batter is too thick, add a tablespoon or two of milk until it reaches a thin, pourable consistency. To keep the crepes warm while cooking the remaining batter, stack them on a plate and cover with foil or place them in a warm oven (200°F). Crepes can be made ahead of time and stored in the refrigerator for up to 2 days. Reheat gently in a pan or microwave before serving.
