Once boiling, reduce the heat to medium-low and simmer gently until the potatoes are fork-tender. This should take approximately 12-18 minutes, depending on the size of your potatoes. Start checking for doneness around 12 minutes.

Carefully drain the potatoes in a colander. Allow them to steam dry for a minute or two. (2 minutes)

Return the drained potatoes to the warm pot. Add the softened butter and chopped chives. Season generously with sea salt and freshly ground black pepper. (2 minutes)

Gently toss the potatoes until the butter is melted and evenly coats each potato. Be careful not to mash them.

For an extra layer of flavor, try browning the butter slightly before tossing with the potatoes. Watch it carefully to prevent burning!

These potatoes are best served immediately. However, leftovers can be stored in the refrigerator for up to 2 days and reheated gently.
