Preheat oven to 400 degrees F (200 degrees C). (5 minutes)

Arrange frozen hash brown patties in a single layer on the bottom of a 9x13 inch baking dish. Bake until golden brown and crispy on the bottom, about 25 minutes.

While the hash browns are baking, finely mince 2 tablespoons of the onion. Reserve minced onion and any accumulated juices. Dice the remaining onion and set aside. (5 minutes)

In a medium bowl, whisk together the mayonnaise, minced onion (with juices), salt (1/2 teaspoon), sweet pickle relish, white vinegar, sugar, yellow mustard, paprika, and onion powder. Set aside the special sauce. (5 minutes)

Heat olive oil in a large skillet over medium-high heat. Add ground sirloin and cook, undisturbed, for 3 minutes to allow browning. Continue to cook, crumbling the meat and stirring occasionally, until browned and mostly cooked through, about 5 minutes. Season with the remaining salt, black pepper, Worcestershire sauce, and diced onion. Cook for 1 minute more, until onions are fragrant. (10 minutes)

Remove the skillet from the heat and stir in 2/3 cup of the special sauce and 1 1/3 cup of the grated Cheddar cheese. (2 minutes)

Flip the hash brown patties over so the crispy side is facing up. Pour the meat mixture evenly over the hash browns. Top with the remaining shredded cheese. (3 minutes)

Sprinkle sesame seeds evenly over the cheese. Bake until the cheese is melted and bubbly, 10 to 12 minutes. (12 minutes)

Remove from the oven and let stand for 5 minutes to allow the casserole to set slightly. (5 minutes)

Top with shredded lettuce and drizzle with the remaining special sauce. Garnish with chopped hamburger dill pickles and serve immediately. (5 minutes)

For extra flavor, consider adding a pinch of smoked paprika to the beef mixture.
If you prefer a creamier sauce, add a tablespoon of milk or cream to the special sauce.
Feel free to substitute ground turkey or chicken for the ground sirloin.
Add a layer of thousand island dressing for more flavor!
