For enhanced flavor, roast the beets instead of boiling. Wrap them in foil with a drizzle of olive oil and roast at 400°F (200°C) for about 45-60 minutes, or until tender. If you don't have raspberry vinegar, balsamic vinegar or red wine vinegar make excellent substitutes. Feel free to add other nuts or seeds, such as pumpkin seeds or chopped walnuts, for added crunch. The salad can be prepared ahead of time, but add the dressing just before serving to prevent the apples from browning. A mandoline slicer can make quick work of preparing the apples and beets.
