For an extra layer of flavor, toast the chopped peanuts in a dry skillet over medium heat for 2-3 minutes, or until fragrant. Be careful not to burn them! If you prefer a tarter salad, use slightly underripe Granny Smith apples. Feel free to experiment with other nuts, such as pecans or walnuts, in place of the peanuts.
