Render Bacon and Sauté Onion: In a large skillet over medium-high heat, cook the bacon until crispy and golden brown, about 8-10 minutes. Remove bacon with a slotted spoon and set aside, reserving the rendered bacon fat in the skillet. Reduce heat to medium-low and add the minced onion to the skillet with the bacon fat. Cook, stirring occasionally, until the onion is very soft, translucent, and almost mushy, about 7-10 minutes.

Add Garlic and Bloom Spices: Add the minced garlic to the skillet with the softened onions and cook until fragrant, about 1 minute. Stir in the chili powder and cook for another 30 seconds to bloom the spices.

Combine and Simmer: Stir in the ketchup, molasses, brown sugar, cider vinegar, Worcestershire sauce, Dijon mustard, liquid smoke, hot sauce, and black pepper. Crumble the cooked bacon and add it back into the skillet. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 15 minutes, stirring occasionally, to allow the flavors to meld together.

Cool and Store: Remove the skillet from the heat and let the barbecue sauce cool slightly before transferring it to an airtight container. Store in the refrigerator for up to 1 week.

For a smoother sauce, use an immersion blender to blend the sauce after simmering.
If you don't have liquid smoke, you can substitute with smoked paprika for a similar smoky flavor.
Adjust the amount of hot sauce to your liking for desired spice level.
This sauce is even better the next day after the flavors have had a chance to meld.
