In a large mixing bowl, cream together the softened butter and granulated sugar at medium speed until light and fluffy (approximately 3-5 minutes).

Beat in the egg yolk and apple butter until well combined (approximately 1-2 minutes).

Gradually add the flour, cinnamon, apple pie spice, and vanilla extract. Mix at low speed until just combined. Be careful not to overmix (approximately 2-3 minutes).

Divide the dough in half. On a lightly floured sheet of waxed paper, shape each half into a 6-inch disc. Wrap well and refrigerate for at least 30 minutes to allow the dough to firm up.

Preheat oven to 350 degrees F (175 degrees C).

Invert one disc of dough into an ungreased 9-inch round pie plate. Press the dough evenly into the plate with lightly floured hands, covering the bottom and sides completely. Flute the edges decoratively using the handle of a wooden spoon or your fingers.

Deeply score the dough into 8 equal wedges. Prick the surface of the dough several times with the tines of a fork to prevent excessive puffing during baking.

Repeat the process with the remaining disc of dough and another pie plate.

Bake for 30-35 minutes, or until the edges are golden brown and the center is set. Remove from the oven and transfer to a wire rack to cool completely.

Once cooled, cut each pie into wedges and serve.

For an extra touch, brush the tops of the wedges with melted butter and sprinkle with cinnamon sugar before baking.
If you don't have apple pie spice, you can substitute with a mixture of nutmeg, allspice, and ginger.
The dough can be made ahead of time and stored in the refrigerator for up to 2 days, or in the freezer for up to 1 month. Thaw completely before using.
Serve these wedges with a dollop of whipped cream or a scoop of vanilla ice cream for an extra special treat.
