Follow The Directions

01

Step

Preheat the air fryer to 390 degrees F (195 degrees C). (2 minutes)

02

Step

Lay egg roll wrappers on a clean work surface, oriented with a point facing you. Spread each wrapper with Dijon mustard, leaving about 1/2 inch border. Place a slice of corned beef in the center, followed by the drained sauerkraut. (5 minutes)

03

Step

Position a mozzarella stick on the bottom point of the wrapper. Tightly roll it up halfway. Fold in the sides, and continue rolling until almost at the end. Moisten the top point of the wrapper with water and finish rolling to seal. (10 minutes)

04

Step

Lightly coat the air fryer basket with olive oil spray or line with a parchment liner. Arrange the mozzarella sticks seam side down in the basket, ensuring they are not overcrowded. Lightly spray each wrapper with olive oil. (3 minutes)

05

Step

Air fry until golden brown, approximately 6 to 8 minutes. Depending on the size of your air fryer, you may need to cook in batches. Serve immediately with thousand island dressing for dipping. (8 minutes)

Ensure the sauerkraut is well-drained to prevent soggy mozzarella sticks.
For extra crispiness, lightly brush the assembled sticks with melted butter before air frying.
If you don't have egg roll wrappers, wonton wrappers can be used as a substitute, though the cooking time may need to be adjusted slightly.
Experiment with different types of mustard, such as spicy brown or whole grain, to customize the flavor.
Leftover mozzarella sticks can be stored in an airtight container in the refrigerator and reheated in the air fryer for a few minutes until warmed through.

These are great, but be careful not to overfill the wrappers. They can burst!

I was skeptical about the mozzarella instead of Swiss, but it totally works! Great recipe.
