Air Fry the Scallops (7-9 minutes): Spray the air fryer basket generously with olive oil cooking spray to prevent sticking. Arrange the bacon-wrapped scallops in the basket in a single layer, being careful not to overcrowd. You may need to cook them in two batches. Cook in the preheated air fryer for 7 minutes. Check for doneness: the scallops should be opaque and the bacon crispy. If needed, cook for an additional 1 to 2 minutes, checking every minute to prevent overcooking.

If using jumbo scallops, increase the cooking time by 2-3 minutes and use longer strips of bacon.
Don't overcrowd the air fryer basket. Cook the scallops in batches to ensure even cooking and maximum crispness.
The Sriracha mayo can be made a day in advance. This allows the flavors to fully develop.
