In a medium-sized bowl, combine the yellow mustard, orange juice, lime zest, lime juice, minced Scotch bonnet pepper, brown sugar, cinnamon, curry powder, salt, and cumin.

Whisk vigorously until all ingredients are thoroughly incorporated and the brown sugar has dissolved. (Approximately 2 minutes)

Taste and adjust seasonings as needed. For a sweeter sauce, add a touch more brown sugar. For more heat, add a pinch of cayenne pepper.

Use immediately, or store in an airtight container in the refrigerator for up to 1 week. Flavors will meld and deepen over time.

For a smoother sauce, you can blend all the ingredients in a food processor or blender after whisking.
If you're sensitive to heat, remove the seeds and membranes from the Scotch bonnet pepper before mincing.
This sauce is also fantastic on grilled vegetables, such as bell peppers, zucchini, and eggplant.
