Dredge the tomato slices: Dip one side of each tomato slice in hot sauce, then press both sides into the flour mixture to coat evenly. Next, dip the floured tomato slice into the egg-milk mixture, ensuring it's fully coated. Finally, gently press the tomato slices into the panko bread crumbs, coating both sides thoroughly. Place the coated tomatoes on a baking sheet and refrigerate for at least 30 minutes to allow the coating to adhere. (45 minutes)

Fry the tomatoes: Heat the vegetable oil in a deep fryer or a cast iron skillet to 375 degrees F (190 degrees C). Carefully fry the tomato slices in the hot oil until golden brown and crispy, about 2 to 3 minutes per side. Remove the fried tomatoes from the oil and place them on a wire rack or paper towel-lined plate to drain excess oil. (10 minutes)

For a spicier kick, use a hotter variety of hot sauce.
If you don't have grill seasoning, you can substitute with a combination of paprika, garlic powder, and onion powder.
Ensure the oil is at the correct temperature for optimal frying. If the oil is not hot enough, the tomatoes will absorb too much oil and become soggy.
Serve immediately with your favorite dipping sauce, such as ranch dressing, blue cheese dressing, or a spicy aioli.
