A properly sealed lid will be concave and firm. Remove the rings for storage and store the sealed jars in a cool, dark place. (Cooling time: 12-24 hours)

For a smoother jam, use an immersion blender to lightly blend the watermelon mixture after simmering. Be careful not to over-blend.
If you don't have canning jars, you can store the jam in airtight containers in the refrigerator for up to 2 weeks.
