Press the mashed potatoes into a large, flat patty covering the entire base of the pot. Drizzle olive oil around the edges of the patty, allowing it to seep underneath. Cook undisturbed until the bottom is deeply golden brown and crispy, about 8-12 minutes.

Using a wooden spoon or spatula, break the large potato patty into smaller chunks, flipping and folding the crispy bottom pieces into the softer mashed potato. Repeat the process of pressing the potatoes back down into a patty, adding more olive oil as needed, and browning the bottom for another 5-10 minutes, then folding again until the desired level of crispness is achieved.

For extra flavor, consider adding a pinch of smoked paprika or some finely chopped fresh herbs like chives or parsley to the mashed potatoes.
The key to achieving maximum crispiness is to avoid overcrowding the pot. Work in batches if necessary to ensure each potato piece has direct contact with the hot surface.
