Follow The Directions

01

Step

Prepare the onion: Soak the sliced red onion in a bowl of ice water in the refrigerator to mellow its flavor. (30 minutes minimum, up to 1 hour). Drain well and rinse thoroughly.

02

Step

Cook the pasta: Bring a large pot of lightly salted water to a boil. Add the rotini and cook according to package directions until al dente (approximately 8 minutes). Drain immediately and rinse under cold water to stop the cooking process. This keeps the pasta from becoming mushy.

03

Step

Combine and Marinate: In a large bowl, gently combine the drained red onion, cooked pasta, flaked tuna, diced celery, roasted red peppers, sun-dried tomatoes, feta cheese, minced parsley, basil, and capers. Pour the Greek vinaigrette over the salad and toss gently to coat all ingredients evenly.

04

Step

Chill and Serve: Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld. This marinating time is crucial for the best flavor. Before serving, toss again and adjust seasoning if necessary. Serve chilled.

For an extra burst of flavor, consider adding a squeeze of fresh lemon juice just before serving.
If you don't have sun-dried tomatoes in oil, rehydrate dry-packed sun-dried tomatoes in warm water for about 15 minutes before chopping.
Feel free to customize this salad with other Mediterranean vegetables, such as cucumbers or Kalamata olives.
Make sure to use a high-quality feta cheese for the best flavor and texture.

I made this the night before a picnic, and it was even better the next day after the flavors had melded. Highly recommend!
