For an even richer flavor, try using heavy cream instead of milk. If you can't find truffled Pecorino, you can use regular Pecorino and add a few drops of white truffle oil to the cheese sauce. Feel free to add other vegetables to the gratin, such as broccoli or Brussels sprouts. The gratin can be assembled ahead of time and baked just before serving.
