Incorporate the raspberries and simmer gently until they soften and the cranberries begin to burst, approximately 5 minutes more.

Strain and Chill (2 hours): Carefully strain the berry mixture through a fine-mesh sieve or strainer, pressing gently to extract all the flavorful liquid. Discard the pulp. Refrigerate the strained mixture for at least 2 hours, or until thoroughly chilled.

Emulsify and Freeze (30 minutes + freezing time): Once chilled, stir in the cherry juice, lime juice, and orange juice concentrate. Ensure all ingredients are well combined. Pour the mixture into an ice cream maker and freeze according to the manufacturer's instructions. This usually takes about 20-30 minutes.

Final Freeze and Temper (2 hours): Pack the sorbet into an airtight freezer container and freeze until firm, about 2 hours. Before serving, remove the sorbet from the freezer about 10 minutes to allow it to soften slightly, making it easier to scoop.

For a smoother sorbet, consider using a high-quality ice cream maker.
If using frozen berries, there's no need to thaw them beforehand.
Adjust the amount of lime juice to taste, depending on your preferred level of tartness.
Garnish with fresh berries or mint sprigs for an elegant presentation.
For a deeper cherry flavor, use tart cherry juice if available.
If you don't have frozen orange juice concentrate, you can substitute with 1/4 cup of fresh orange juice, but reduce the water by 1/4 cup.
