Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking dish.

Spread the thawed hash browns evenly across the bottom of the prepared baking dish. (2 minutes)

Heat olive oil in a large skillet over medium heat. Add chorizo and onion. Cook, breaking up the chorizo with a spoon, until the chorizo is browned and the onion is softened. Drain off any excess grease. (8-10 minutes)

In a large bowl, whisk together the eggs, 2 cups of cheddar cheese, 1 cup of sour cream, milk, salt, and pepper. Stir in the cooked chorizo mixture. (3 minutes)

Pour the egg mixture evenly over the hash browns in the baking dish. Dollop the remaining 1/2 cup of sour cream over the egg mixture. Sprinkle with the remaining 1 cup of cheddar cheese. (5 minutes)

Bake in the preheated oven for 35-45 minutes, or until the casserole is set and the cheese is melted and golden brown. (35-45 minutes)

Remove from the oven and let stand for 5-10 minutes before cutting into squares. Sprinkle with green onions, avocado slices, and pickled jalapeños (if using). Serve immediately.

For a vegetarian option, substitute the chorizo with 1 pound of crumbled vegetarian sausage or sautéed mushrooms and bell peppers.
To prepare ahead, assemble the casserole and refrigerate it overnight. Add 10-15 minutes to the baking time.
For extra flavor, try using a mix of cheddar and Monterey Jack cheese.
If you don't have fresh chorizo, you can use pre-cooked chorizo sausage.
Feel free to add other vegetables such as bell peppers, mushrooms, or spinach.
