Bring a large pot of lightly salted water to a rolling boil. Add the macaroni and cook until al dente, about 8 minutes. Drain well.

In a separate large pot, place the cubed potatoes and cover with salted water. Bring to a boil, then reduce heat and simmer until fork-tender, approximately 20 minutes. Drain, then peel and finely chop the potatoes once they're cool enough to handle.

Combine the chopped potatoes, onion, carrot, and minced garlic in a small saucepan over medium heat. Add 2 tablespoons of water and cook until the vegetables are softened and the water has mostly evaporated, about 3 minutes. Remove from heat.

Transfer the potato mixture to a high-speed blender. Add 3/4 cup water, raw cashews, soy milk, nutritional yeast, lemon juice, sea salt, paprika, and cayenne pepper. Secure the lid and pulse a few times to start, then blend until completely smooth and creamy.

Heat the remaining 2 tablespoons of water in a nonstick skillet over medium heat. Add the broccoli florets and cook until tender-crisp, about 5 minutes. Transfer the broccoli to a large serving bowl.

Add the cooked macaroni to the bowl with the broccoli. Pour the cashew sauce over the macaroni and broccoli, and mix thoroughly until everything is evenly coated in the luscious sauce. Serve immediately and enjoy!

For an even creamier sauce, soak the cashews in hot water for 30 minutes before blending.
Feel free to substitute other vegetables for the broccoli, such as cauliflower or peas.
Adjust the amount of cayenne pepper to your preferred level of spice.
If the sauce is too thick, add a tablespoon or two of water until you reach the desired consistency.
