Place potatoes in a large pot and cover with salted water. Bring to a boil, then reduce heat and simmer until tender, about 20 minutes. Drain well and return to the pot. Roughly mash with 1/4 cup butter. (30 minutes)

While potatoes cook, cook bacon in a large skillet over medium-high heat until crispy, about 10 minutes. Remove bacon, leaving 1 teaspoon of drippings in the skillet. Drain bacon on paper towels and crumble once cooled. (15 minutes)

Add chopped onion to the skillet and cook over medium-low heat until softened and translucent, about 5 minutes. Scrape onion and any browned bits into the pot with the mashed potatoes. (7 minutes)

Stir in the crumbled bacon, cottage cheese, green onion, and 1/2 cup of shredded Cheddar cheese. Season with salt and pepper to taste. Gently combine. (5 minutes)

Spoon mixture into the prepared baking dish, dot with 2 tablespoons of butter, and sprinkle with 1/4 cup of Cheddar cheese. Garnish with paprika. (5 minutes)

Bake uncovered for 30 minutes, or until golden brown and bubbly. Let stand for 5-10 minutes before serving. (40 minutes)

For a richer flavor, use smoked bacon.
Feel free to experiment with different cheeses, such as Gruyere or Monterey Jack.
To make ahead, assemble the dish and refrigerate. Add about 10-15 minutes to the baking time.
For a creamier texture, add a splash of milk or cream to the potatoes while mashing.
