For optimal flavor, toast the walnut halves in a dry skillet over medium heat for 5-7 minutes, or until fragrant, being careful not to burn them.
Adjust the amount of lemon juice to taste, depending on the tartness of the apples.
If you don't have Neufchatel cheese, cream cheese can be substituted.
The dressing can be made ahead of time and stored in the refrigerator for up to 2 days.
To prevent the apples from browning, soak the diced apples in water with lemon juice.
