Heat olive oil in a large, oven-safe skillet (cast iron preferred) over medium heat. Add diced sweet potato; cover and cook, stirring occasionally, until tender, about 8-10 minutes. Transfer sweet potatoes to a large bowl.

In the same skillet, increase heat to medium-high. Add sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess grease and add the cooked sausage to the bowl with the sweet potatoes.

Return the skillet to medium heat. Add chopped onion and red bell pepper. Cook until softened, about 3 minutes. Season with salt and pepper. Add sliced mushrooms and chopped kale; cook until kale is wilted and mushrooms are tender, about 3 minutes more. Transfer the vegetable mixture to the bowl with the sausage and sweet potatoes.

In a separate bowl, whisk together eggs, water, thyme, salt, and pepper until well combined. Pour the egg mixture over the sausage and vegetable mixture in the bowl. Gently stir to ensure all ingredients are evenly coated.

Pour the entire mixture back into the oven-safe skillet. Spread evenly.

Bake in the preheated oven until the egg is set and the sweet potato is lightly browned, about 20-25 minutes. Remove from oven and let stand for 5 minutes before serving.

Garnish with sliced green onion and serve warm.

For a vegetarian option, substitute the sausage with 1 (15-ounce) can of drained and rinsed chickpeas or another plant-based sausage alternative.
Feel free to customize the vegetables based on your preference and what you have on hand. Other great additions include spinach, zucchini, or chopped broccoli.
To make this dish ahead of time, assemble the bake in the skillet, cover tightly, and refrigerate for up to 24 hours. Add an extra 5-10 minutes to the baking time if starting from cold.
For a cheesier bake, sprinkle 1/2 cup of shredded cheddar or mozzarella cheese over the top during the last 5 minutes of baking.
