Cook and stir until luncheon meat is evenly seasoned and lightly browned. Reduce heat to low to keep warm. (5-7 minutes)

Spray another skillet with cooking spray and heat over medium-high heat. Place 1 tortilla in the skillet and cook until heated through. Repeat with remaining tortillas. (30 seconds per side)

Top warm tortillas with luncheon meat, lettuce, Cheddar cheese, olives, tomato, and onion.

For an extra layer of flavor, consider adding a dollop of sour cream, a scoop of guacamole, or your favorite salsa to these tacos.
For a spicier kick, use a hot taco seasoning mix.
Toasting the tortillas directly over a gas flame (briefly!) adds a delightful char and enhances their texture. Watch carefully to avoid burning.
